Chicken Parmesan Pizza

Ingredients:

  • 1 ball of fresh pizza dough (purchased from your local market or pizzeria)
  • 8oz, salted mozzarella (hand-sliced into 15-20 small pieces)
  • 2 breaded chicken cutlets (homemade or deli bought, sliced into strips and cut lengthwise)
  • 4-5 Tbs, marina sauce
  • 1 Tbs, EVOO (extra virgin olive oil)
  • 1-2 Tbs, all-purpose flour

Cookware: Round pizza pan/large square pan (lightly sprayed with Canola oil) + rolling pin/ tall, water glass

Directions:

Preheat oven to 400 degrees. 

Remove dough from bag and gently lengthen the dough by holding with both hands hanging in the air and letting it slowly dropdown. Then lightly flour one side and place down on the pan. 

Using a rolling pin or tall water glass roll the dough outward starting from the center. Turn over to complete and add a little flour to turned side. Be sure to flatten the outside crust. Your pizza does not need to be a perfect circle, any shape will do. 

Take 1 tablespoon of olive oil and spread all over the pizza. Using your favorite marinara sauce, evenly spread 2 tablespoons to coat the pizza. Then take your chicken strips and in a circular motion, place the strips around the outside edge first (approx. ⅛ of an inch apart) working your way into the center until you use all the chicken. 

Repeat this process with the mozzarella slices filling the gaps between the chicken piece, only slightly covering the chicken. Once you have filled the pizza with mozzarella, take 2-3 tablespoons of your sauce and gently spread all over the top of the pizza. 

Place the pizza on the middle rack of your preheated oven and bake for 21 minutes. Cook an extra 4-5 minutes for a crispier crust, if preferred. 

Take out the oven and let cool for about 5 minutes, then slice into quarters first. You can then cut the quarters in half.
